TRIKAYA RESTAURANT
Trikaya, the in-house restaurant, invites guests to an exceptional dining experience in a serene ambiance. The ambiance encourages the transcendence of screens and mindful eating, connecting with the beauty surrounding guests. Beyond a meal, guidance is offered to cultivate sustainable dietary habits, extending the benefits beyond the stay. Consultation with the reservation team allows immersion in culinary experiences and learning the art of preparing nutritious recipes.
Ayurveda asserts that when food is wrong, no medicine can help, and when it's right, there's no need for medicine. Food, akin to a non-prescriptive drug, can be a powerful distraction, especially for those grappling with anxiety and depression. Emotional eating, a form of addictive behavior, often leads to unhealthy choices, providing a temporary sense of comfort. In the "slow food vegetarian restaurant" at Sitaram, the team serves with love and care, offering food tailored to the well-being of guests. Ingredients are sourced from reliable local providers, and strict avoidance of artificial additives, refined flour, refined sugar, and preservatives is maintained. The use of oil is minimized to enhance the dining experience. In Sitaram Retreats don’t have buffets
Sitaram Retreats are crafted as spaces for holistic transformation, addressing current health issues, and reshaping behaviors. Acknowledging the pivotal role the environment plays in reshaping deeply conditioned behaviors complements the individual's willpower.
The Concept of Six Tastes
These tastes are not just perceived by the tongue but also act on the body. Here's a breakdown of the six tastes:
Sweet:
- Considered sweet are ghee, fruits, milk, legumes, and grains.
- Sweet reduces Pitta and Vatha, promoting strength, refreshment, hair growth, and vital energy. Excessive use can lead to imbalances like obesity and poor digestion.
Sour:
- Includes yogurt, citrus fruits, unripe mango, and fermented beverages.
- Sour taste increases Kapha and Pitta, aiding in digestion but causing issues like flabbiness, diminished vision, itching, and fever in excess.
Salt:
- Salty tastes come from natural salts and seafood.
- Salt reduces Vatha, lubricating tissues, improving digestion, and causing perspiration. Excess can lead to inflammatory swellings and weakness.
Acrid-Spicy/ Pungent:
- This category includes chilly, spices, etc.
- This taste reduces Kapha and increases Pitta and Vata. It aids digestion but excess can cause thirst, muscle cramps, and giddiness.
Bitter:
- Most vegetables, especially dark leafy ones, herbs, and spices like turmeric are bitter.
- Bitter taste reduces Pitta and Kapha and increases Vata, addressing issues like loss of appetite and skin diseases.
Astringent:
- Reducing Pitta and Kapha, astringent tastes are found in raw vegetables, beans, and tea.
- Astringent tastes purify the blood, reduce fat deposition, and cause dryness. Excess can lead to discomfort, abdominal distension, and constipation.
The Concept of Six Tastes
These tastes are not just perceived by the tongue but also act on the body. Here's a breakdown of the six tastes:
Aama Pachana Aahara (APA):
- Food to improve digestion and reduce inflammation. The signature diet at Sitaram includes fruits, vegetables, rice, side dishes, and different pancakes.
Poorva Virechanam Aahara (PVirA):
- Served before 'VIRECHANAM' for one or two days, this diet is moderately spicy with an added sour taste, including fruits like pineapple and citrus.
Peyadi Aahara (PA):
- Consisting of only rice gruel and a small amount of a side dish, this diet is given when digestion is low, especially during ghee therapy and cleansing days.
Five Meal Plan (FMP):
- This plan serves normal food but in lesser quantities. Fruits or boiled vegetables are served between regular meal timings, designed to reduce unwanted body weight.
Specific Diets:
- Tailored plans for gluten intolerance, lactose intolerance, diabetes, and other health conditions. Allergies are strictly taken into consideration.
These tastes are not just perceived by the tongue but also act on the body. Here's a breakdown of the six tastes:
Preparatory Phase:
- Light foods are served to aid and prepare the body for purificatory therapies.
Low Appetite and Irregular Bowel Movements:
- Specific herbs are added to increase Agni and strengthen metabolism.
High Food Cravings:
- A five-time meal plan is implemented to retrain the mind and body to extract maximum energy from standard portion sizes.
Panchakarma Treatments:
- Specific diets are followed to activate particular doshas in the body before eliminating toxins. This ensures the effectiveness of the treatment.
Post-Purification Phase:
- Sensitivity is considered, and extremely light foods like soups, especially Kanji (rice soup), are served. Gradual reintroduction of normal and nourishing foods follows.
Specialized Diets:
- Conscious diets monitoring glycemic index for diabetics and anti-inflammatory diets for joint issues.

The first consultation is foundational in the healing journey. Be open and honest, avoiding self-diagnosis. Explain symptoms vividly.
Walking in with a preconceived diagnosis may hinder fresh insights.
Describe habits clearly. For example, if consuming 4-5 cups of tea daily, withdrawal headaches during treatment can be addressed with suitable herbal tea substitutes.
Prioritize symptoms to improve upon.
For conditions like skin issues, sleep disturbances, and body pain concurrently, specify which affects life the most.
Regularly meet the doctor during the stay at Sitaram Beach Retreat to track progress and make necessary adjustments.
Share emotional concerns, as mental states profoundly impact physical health. Open communication aids in understanding the underlying emotional aspects.
