At Sitaram Mountain Retreat, dining at Trikaya Restaurant is designed to be more than a meal—it is a mindful and transformative experience. Set in a serene and elegant environment, the restaurant encourages guests to step away from screens, savour each bite with intention, and connect with the surrounding beauty. Meals are prepared and served with love, care, and an emphasis on health, aiming to instil sustainable dietary habits that extend beyond the stay. Guests may also consult with the reservation team to engage in enriching culinary experiences, including learning the art of preparing wholesome and nutritious recipes.
Deeply rooted in Ayurvedic philosophy, Trikaya follows the belief that when food is wrong, no medicine can help; when food is right, there is no need for medicine. Recognising that food influences both body and mind, the retreat addresses emotional eating and promotes balanced choices, particularly for those managing anxiety or depression. The restaurant serves slow food vegetarian cuisine, sourcing only from trusted local providers. Artificial additives, refined flour, refined sugar, and preservatives are strictly avoided, while oil use is kept minimal to ensure light and nourishing meals. In keeping with the retreat’s mindful dining approach, buffets are not offered.
Menus are carefully designed to complement the holistic healing programs of the retreat. Guests are introduced to the six tastes of Ayurveda—sweet, sour, salty, pungent, bitter, and astringent—each with unique benefits. Sweet tastes such as ghee, fruits, and grains promote strength and energy. Sour tastes like citrus fruits and yoghurt aid digestion. Salty tastes enhance tissue lubrication. Pungent flavours stimulate metabolism. Bitter tastes cleanse and balance, while astringent foods purify the blood and reduce fat deposition. These tastes are thoughtfully balanced in each meal to restore harmony to the doshas.
Special dietary plans are tailored to guests’ health needs and stages of treatment. These include Aama Pachana Aahara (APA) for digestion and inflammation, Poorva Virechanam Aahara (PVirA) before purification therapies, Peyadi Aahara (PA) during low digestion, and a Five Meal Plan (FMP) for weight management. Diets are also customised for gluten intolerance, lactose intolerance, diabetes, and allergies. Throughout all stages—whether preparing for Panchakarma, stimulating metabolism, managing cravings, or recovering after purification—each meal is carefully crafted to work in harmony with the therapies.
From light, easily digestible soups in the post-purification phase to nutrient-rich anti-inflammatory meals for joint health, dining at Sitaram Mountain Retreat blends culinary expertise, Ayurvedic wisdom, and genuine care. Every plate served at Trikaya Restaurant reflects the retreat’s mission: to nourish the body, mind, and spirit, leaving a lasting impact on each guest’s wellness journey.
